Cask Infused Clover Club
Ingredients:
- 60 ml Barrel Aged Gin
- 15 ml freshly squeezed lemon juice
- 15 ml raspberry syrup
- 1 fresh egg white (or 30 ml pasteurized egg white)
- Ice cubes
- Fresh raspberry to garnish
Preparation:
- Pour the barrel-aged gin, lemon juice, raspberry syrup and egg white into a cocktail shaker.
- Shake dry (without ice) for about 10 seconds to froth the egg whites.
- Add ice to the shaker and shake again vigorously until the mixture is well chilled.
- Strain through a fine-mesh sieve into a chilled cocktail glass.
- Garnish with a fresh raspberry and serve.
